Recipe - Healthy Granola

I was at the grocery store today looking through the cereal aisle.  I thought that some nice granola would be a good way to mix up my yogurt or as a nice snack.  Then I thought, why not make my own; good granola isn't cheap.  What I learned is that making your own isn't cheap either, but on a per serving basis, you come out way ahead, and it's easy.

The basis of any granola are some grains and a binder.  Then you can add some dried fruit and nuts and other ingredients as you like.  Next, you mix it all up, bake it, cool it, and it's ready to serve.

An entire batch, which is probably 20-30 servings is 5,175 calories, with 627 g carbs, 271 g fat, and 103 g protein.  It isn't the healthiest option out there, but it has alot of "good for you" ingredients and most importantly to me, it tastes great.


Ingredients

5 C Old Fashioned Oats (not quick oats or instant oats)
1/2 C Flax Seed Meal
8 oz Sweetened Coconut Flake (unsweetened would be better, but I didn't have any)
3/4 C Slivered Almonds
3/4 C Pecan Pieces
1/2 C Brown Sugar
3/4 C Water
1/4 C Canola Oil
1/4 C Honey
1/4 C Molasses
1 tsp Salt
1 tsp Cinnamon
1 Tbsp Vanilla
1/2 tsp Ground Nutmeg
1/4 tsp Ground Ginger
1 1/2 C Dried Fruits (I bought an  berry blend with various raisins, cranberries, blueberries, and cherries)

Preparation

Preheat your over to 300 degrees.
In a really, really large bowl, add the oats, flax seed meal, coconut, almonds, and pecans.
Mix them to combine and evenly distribute
In a medium pot, add the brown sugar, water, oil, honey, molasses, salt, cinnamon, vanilla, nutmeg, and ginger.
Heat over a low heat stirring regulary with a whisk until everything is combined and uniform.  It should not get to a boil.
Pour the wet ingredients over the dry ingredients in the huge bowl and mix with a silicone spatula until all everything is coated and becomes a slightly darker, wetter looking color.
Line two large cookie sheets with parchment paper.
Spread half of the mixture onto each sheet and flatten it out into as thin of a layer as possible.
Cook the granola for 20-30 minutes, stirring it every few minutes and rotating them in the over.
It's done when you think it feels crunchy enough.
Take them out of the oven to cool completely.
Once it's cool, add the dried fruits and mix it up again to evenly distribute the fruit.
Store in an airtight container or better yet, package it into individual snack-size servings in zip top baggies for a quick on the go snack.
From start to finish, this took me about 45 minutes and I already had almost everything in my pantry.  It tastes great, it's reasonable healthy, and it's something you can make yourself and get further away from processed junk.  Enjoy!!!
